SINGLE SERVING SLOW COOKER RECIPES! CROCKPOT MEALS FOR ONE!

TIme to break out the slow cooker! I love my crock pot, not only for my family but for when I’m cooking just one meal for myself. Today I tried out 4 recipes that make cooking for one super simple!

Recipe amounts:

Creamy Chicken Soup:
2 chicken tenders (salt, pepper, smoked paprika)
1 can cream of chicken soup
1/4 cups spinach
1/4 cup frozen sliced carrots
1/4 cup frozen edamame
1 TBS minced garlic
crackers to top
** Cook on low 4-5 hours, high 3-4 hours

Corn Casserole
1 cup corn
1 cup creamed corn
1/2 cup jiffy corn bread mix
1/4 cup sour cream
salt & pepper to taste
1/4 cup cheddar
1 TBS melted butter
** Cook high 4 hours

Turkey Meatloaf:
1/2 lb ground turkey
1 egg
1/4 cup bread crumbs
1 tsp mustard powder
1 tsp oregano
1 tsp basil
1 tsp salt
1 tsp soy sauce
dash pepper
1-2 TBS bbq sauce
** Cook low 3.5 hours

Classic Pot Roast:
1/3 lb chuck roast
3 small potatoes
5 baby carrots
1/2 cup liquid
1 tsp oregano
1 tsp basil
2 tsp rosemary
s & p to taste
** Cook low 6 hours

  4. This is EXACTLY what I needed for my College bound son in his apartment! Thank YOU! He rather SEE than read recipes, as he is just wired that way. I told him pretty much how to make the stew and chicken soup, but he still needed to visually see it. I found this video and it just confirmed my method was spot on for him. He is learning how to expand his cooking and I gave him my little 1 temp crock pot. If you could also add to your future videos how long to cook on both low AND high, I think that would be helpful. I know the difference, but he does not and tends to follow directions exactly otherwise he doesn’t quite know what to do. I try to tell him, but he learns best by doing. Again, great simple video that I will send him.

  5. You can make a slurry and add it to that nice juice and you’ll have a litte gravy to go with your beef or potatoes.

  6. Good Ideas! I have a little 1.5 qt crock pot, and I make a whole pound turkey meatloaf in mine. I shape it like a ball, and set it on top of a small round meat rack covered with foil. Cook on High. I think it only takes about 2 or 2.5 hours.

    I also did a pot roast similar to yours, using sirloin steak; it came out pretty good, great idea! I added my carrots and potatoes an hour or so after the meat, onions, and celery. I had it going for about 2.5 hours and decided to lie down for a while, so I put it on Warm. When I got up a couple hours later, it was perfectly done.

  7. More please….. Lonely 67 year old dude that likes to cook and experiment. I have both large and small crockpots but rarely ever use my small one. I usually follow the recipes for the large crockpot and end up eating the same thing for dinner 5 nights in a row. I can’t wait to try the corn casserole and meatloaf recipes. Thank you for these

  8. I don’t know if mine is defective, but I find it burns around the side . It happens every time. I might buy another. Is this normal for the smaller crocks?

  9. Well,I conquered cooking eggs in the B& D rice cooker. I love using, I owe that to you when I stumbled on your rice cooker site. I make jiffy cookies, one box of blueberry 1 box red raspberry, or any 2 boxes of Jiffy.

  10. Sometime try salsa on top of your meatloaf instead of BBQ sauce or ketchup. AMAZEBALLS! 🍅🧅🌶️ 🧄 🌿

  11. I gave my slow cooker to the goodwill,as I rarely used it. No way in hell would I leave any cooking appliance running all day unattended.

  12. I have a mini crockpot that I use to make oatmeal for the week. It makes at least 5 servings. Sometimes I eat oatmeal for dessert and not just breakfast. That is about the only thing I make in my mini crock. Even though I’m single, I’d rather use a large crock pot to make a meat loaf or pot roast or whatever because I like to have several meals to eat and it’s a waste of 4 hours to just cook one meal at a time. I’d rather make meals for the week and have left overs.

  13. Love these. Going to try them tomorrow. I’ll have to make adjustments for my angry gut issues. If I exchange the cream of chicken with coconut cream and a little bone broth, will I get the same results ?

  16. Awesome recipes! I want to try the corn casserole, but I only have a 6 quart slow cooker. I would love to increase it, so what would you say, triple the ingredients or quadruple? Your help is greatly appreciated.

  17. So good to see single serve meals, especially for the crockpot. Could easily expand for 2, especially 2 seniors who don’t eat large servings. I have the crockpot you showed, and will definitely try these. Would love to see some meatless ones also

  18. I have a 1.5 litre Crock Pot its great still getting the hang of it I have been filling mine , but it is far too much for 1 person. So you have shown me some thing here thanks. By the way they are great pots ! You should have used your juices left in your pot roast for gravy, small skillet flour butter and a stock cube and the juices oila !

  19. I am retired and purchased two small crock pots, so I can put one insert in the dishwasher and make another meal in the second. I found ‘snack pack’ carrots that are about 4 ounces each. Half a chopped onion and a few small potatoes with some cubed stew beef, topped with Lipton’s onion soup mix (not the entire packet) is delicious. I will try some of yours.

  26. I am a single senior. I made a small batch of chili in my small slow cooker last week. I like to make enough for at least two meals. My chili made enough for three meals.

  27. Need this so much now I’m older and chronic pain. I use my slow cooker so much in winter cause it’s easier to stand in the morning than in the afternoon.

  28. hi claire i am a uk pensioner living alone and found your video informative and entertaining you come over as a warm and friendly helpful person i own a full size crockpot but also bought the baby version off amazon one of my best purchases ever i enjoy cooking and trying new dishes and although i am nowhere near an expert i love copying ideas from people who do know what they are talking about please keep up the good work
